The Seafood Trail is delighted to bring you regular recipes from Christopher Trotter, Food Ambassador. Christopher is a passionate advocate for seasonal fresh Scottish food and his recipes for The Seafood Trail bring together delicious seafood from Scottish waters and fresh, seasonal vegetables.
As Christopher told us “Scottish seafood is among the finest in the world, the quality and variety are unsurpassed, so visit these wonderful individual establishments in the trail and then try a recipe or two at home.”
Christopher, who trained at the Savoy in London, runs a food consultancy business which takes him all over Scotland. He has also written 8 cookery books - the most recent called 'Kale'. Read more about Christopher here>
Christopher explained his approach to recipes; "When I create a recipe I like to consider the reader and bring them into the story, the ingredients should be easily available or alternatives suggested. The season is paramount - it’s important to me that we look around us to see what is available and then decide what to cook, Fresh, local and in season locally is my mantra, but above all I want people to think 'that sounds good I’ll have a go at that'."
